It seems that the nesting phase of my knocked-up-ness has started kicking in. The house, which is still far from neat and tidy, is about as neat and tidy as it's ever been.
And I can't seem to STAND having any dishes in the sink, or on the drainboard, for that matter. This bit of anal retentiveness from the queen of "Oh, I'll just let it soak for a while -- clean up will be a breeze!" My husband isn't quite sure what to make of it all.
And I went on a bit of a cookie bender (for me). I started out wanting to make one type, and ended up with three.
My favorite were the Mexican Wedding Cakes. They are so light, airy and yummy, and about the easiest cookie EVER to bake. I will make these again and again,...
I then moved on to oatmeal cookies with fresh cranberries, white chocolate and walnuts. I used this recipe as the starting point. Flavor is good, but not the prettiest cookie on the block, unfortunately. I also prefer oatmeal cookies with a lot of oatmeal, and these didn't really fit that bill.
Then came the thumbprint cookies with coconut and jam (I heart Ina Garten!). Also easy to make, and the coconut is pretty and a nice touch, but gave me fits -- it BURNS, dammit! And yes, I moved the oven rack up, used two stacked cookie sheets for insulation,... The judges are still out on this one.
I also wanted to make biscotti, but ran out of steam and had to take a nap.
No pictures, unfortunately. I was SO FOCUSED, that the cookies were wrapped up and out the door before I could snap a photo or two. Efficiency makes for pictureless blog post,...
