I hit the Korean grocery store in San Jose today, and stocked up on the basic rations, including a tidy little jar of kim chee. Kim chee fried rice with spam, anyone? It's one of my dad's specialties, which, if I'm lucky, he makes for me and my guy when we visit. Recipe at the end of the post if you're interested.

I love the texture of the fir cone lace pattern pre-blocked. So cool. But flat is cool too,... I guess.
Kim Chee Fried Rice w/ Spam
Wash 2 cups of rice and steam in the cooker. Pop open a can of Spam (I use the "lite" variety. I know,.. total denial, OK??) and cut into 1/2" cubes. Throw into large frying pan and brown. Drain on paper towels and set aside. Chop up the kimchee -- if it's the whole kind, about 1/2 a cabbage, if it's already cut, a little less than a quart (3-4 cups) -- and fry it in 1 Tbsp of butter and 1 Tbsp of sesame oil until the kim chee softens, about 5-7 minutes. Add the spam to the kim chee, and heat through before adding about 3/4 of the rice to the pan. Stir together until ingredients are combined. If it's a little too kim chee strong for your taste, add more rice, otherwise, it's good to go! I eat it as is, but my guy likes a fried egg on top. Either way -- yum!!
